Spicy Tofu, Banana and Peach Crepes


Any basic crepe recipe will do, I used the Joy of Cooking's

The love is in the stuffing. I started it first and let it simmer on a low heat the whole time I made the actual crepes.

Ingredients:
3 small peeled and sliced peaches.
1 peeled and sliced banana
2 tsp of butter
1 tbsp of powdered sugar
about 1/3 pkg of crumbled tofu
a few dashes of cayenne pepper ( depending how spicy you like things - I used a lot)
pinch of salt

Combine all ingredients in a small frying pan and simmer until you're ready to stuff your crepes.
