1 lg red potato
1 sm sweet potato
1/2 med yellow or white onion
3 handfuls of chopped kale
1 whole jarred roasted red pepper
1 can of rinsed black beans
1/2 package of extra firm tofu
Cumin powder
Garam Masala or cinnamon
salt and pepper
olive oil
Generously coat a large/deep frying pan with olive oil and place on a med/low heat. Throw everything directly into the pan. Cut the potato and sweet potato into half inch cubes, toss in pan. Allow potatoes to cook for 10 min or so, until partially softened. Chop onion and add to potatoes. Chop kale and roasted red pepper and add to pan. The kale soaks up olive oil so if it needs a little more to keep from sticking feel free to add it. At this time add about 1 tsp of cumin, 1 tsp of garam masala or cinnamon, salt and pepper to taste. Allow to simmer until potatoes are completely soft. Add beans and crumble tofu into pan. Cook for another 5 min stirring all the ingredients together. Serve hot. Yum!
